HOT CHICKEN SALAD

This is
what you need...

2 Chicken Breasts
Various Salad Leaves eg: iceberg, Cos and herbs, coriander, parsley.
Cucumber, tomato, peppers, garlic, extra virgin olive oil, soy and tamari
sauce, balsaic vinegar.
This is how
you do it...
Slice the chicken into
BIG mouth portions. Heat the oil in a firm-bottomed pan, make sure it's
hot. Add a sizeable quantity of garlic. (Amount depending on personal
taste and who you're meeting later! Also, fresh is best! However, when I'm
in a hurry I generally use Lazy Garlic ready diced in a jar. It saves time
and your hands smell better!)
Add the chicken, moving it around searing it quickly.
Once browned, turn the heat down a little to ensure that the chicken gets
cooked through. Meanwhile, make up the salad, preferably in largish bowls.
Dress with balsamic vinegar, again the amount to your own taste. (Just
don't drown it! It'll spoil the flavour!)
Turn the heat up under the chicken again, evaporating any unwanted juices;
adding soy and tamari (tamari is my favourite; it's not quite as heavy a
flavour as the soy).
Put the chicken into the bowls on top of the salad. (You might like to
sprinkle a small amount of cheese over the tope if you like.)
Serve this
with...As this is
an entire meal in itself, I wouldn't recommend adding much else. A good
crusty warm bread might be an option.
Wash it
down with...A
chilled white wine. Preferably chardonnay or sauvignon blanc, ideally
Australian or Chilean.
